We are taking our show on the road! Not too far down the road though. This time we are headed to Redemption Farms in Western PA. This three-day workshop will focus on all aspects of taking a pig from the field and transforming it into delicious food just as it was intended to be. Day one is humane, on-farm slaughter, and how to scald and scrape a pig to preserve the skin for food. We also focus on using the nutrient-dense odd bits that most people throw away. Day two is all about butchering and making the most of the entire pig. Along with the butchering we will cover packaging, cooking, making stock, pork rinds, and much more. Day three is all about preserving, curing, and aging meat at your home, along with plenty of wonderful food from the pig. Join us!
